Biografia

Laurea in Chimica e Tecnologia Farmaceutiche presso il Dipartimento di Scienze Farmaceutiche dell’Università degli Studi di Firenze, conseguita il 20/07/95, con voto 110/110 e lode. Titolo della tesi: “Studio dei composti polifenolici presenti nelle bacche di Vitis vinifera L., cultivar Ancellotta”. Relatore: Prof. Franco F. Vincieri.

Dottorato di ricerca in Scienza e Tecnologia delle Piante Officinali(XII ciclo), dal titolo “Caratterizzazione ed usi innovativi di composti polifenolici presenti in specie del bacino mediterraneo”. Attività di ricerca svolta presso il Laboratorio di Fitofarmacia del Dipartimento di Scienze Farmaceutiche, Università degli Studi di Firenze, sede amministrativa Dipartimento di Chimica Biorganica, Università di Pisa.

Nomina a ricercatore universitario per il settore scientifico-disciplinare SECS P/13 (ex C01B) “Merceologia” con decreto rettorale n.1086 del 30/10/00 a decorrere dal 01/11/00, e da allora fa parte del Laboratorio di Merceologia e Qualità delle Risorse (Mer.Qu.Ris), presso la Facoltà di Economia dell’Università degli Studi di Firenze, Polo delle Scienze Sociali. Per l’attività di ricerca afferisce al Dipartimento di Scienze Farmaceutiche, Polo Scientifico e Tecnologico di Sesto Fiorentino (Fi). Dal 2013 il Settore Scientifico Disciplinare SECS - P/13 afferisce al Dipartimento di Statistica, Informatica, Applicazioni “G. Parenti” - DiSIA.

Dal dicembre 2013 viene creata l’Unità di Ricerca Interdipartimentale denominata PHYTOLAB (Pharmaceutical, Cosmetic, Food Supplement Technology and Analysis), facente parte dell’ex Dipartimento di Scienze Farmaceutiche, in compartecipazione tra il Dipartimento di Statistica, Informatica, Applicazioni (DISIA), il Dipartimento di Chimica e il Dipartimento di Neuroscienze dell’Area del Farmaco e della Salute del Bambino (NEUROFARBA).

Dal 1 settembre 2015 è Professore Associato in Scienze Merceologiche, settore scientifico disciplinare SECS-P/13, presso il Dipartimento di Statistica, Informatica, Applicazioni "G. Parenti" - DiSIA, Laboratorio Phytolab, Polo Scientifico e Tecnologico di Sesto Fiorentino, Università degli Studi di Firenze.

Dal 2017 è referente scientifico accademico per l'Unità di Ricerca in "Innovazione circolare e commodities sostenibili" (responsabile scientifico Dott. Leonardo Borsacchi) diARCO - Fondazione PIN.

Negli anni 2019-2023 è stata Presidente del Corso di Laurea Triennale in "Sviluppo economico, cooperazione internazionale, socio-sanitaria e gestione dei conflitti" dell'Università degli Studi di Firenze.

Da ottobre 2020 ha conseguito l'abilitazione a Professore Ordinario per il settore scientifico disciplinare delle Scienze merceologiche (SECS-P/13).

Attività di ricerca

L'attività di ricerca riguarda i seguenti aspetti:

- studio di bio-componenti in piante medicinali, matrici biologiche e nutraceutici,

- caratterizzazione e certificazione della biodiversità agricola e alimentare,

- promozione di prodotti alimentari locali e visite legate al turismo sostenibile.

Competenze tecniche

Determinazione analitica e strutturale di sostanze naturali vegetali (biomolecole, come fenilpropanoidi, flavonoidi e antociani) e si concentra sull'ottimizzazione delle procedure di estrazione e frazionamento di antiossidanti polifenolici. L'attività riguarda lo sviluppo di metodi di analisi quali-quantitativa di principi attivi e la caratterizzazione di matrici vegetali di interesse biologico/alimentare. Metodi analitici: HPLC (con rivelatori UV-Vis, indice di rifrazione, rivelatore a matrice di diodi), e tecniche combinate di spettrometria MS, come HPLC/MS-TOF e HPLC/MS/MS.

È membro dell'AISME (Accademia Italiana di Scienze Merceologiche) e del GP (Groupe polyphénols, Bordeaux, Francia).

Biography

Degree in Pharmaceutical Chemistry and Technology at the Department of Pharmaceutical Sciences of the University of Florence, obtained on 07/20/95, with a grade of 110/110 cum laude. Thesis title: “Study of polyphenolic compounds present in the berries of Vitis vinifera L., cultivar Ancellotta”. Supervisor: Prof. Franco F. Vincieri.

PhD in Science and Technology of Medicinal Plants (XII cycle), entitled “Characterization and innovative uses of polyphenolic compounds present in species of the Mediterranean basin”. Research activity carried out at the Laboratory of Phytopharmacy of the Department of Pharmaceutical Sciences, University of Florence, administrative headquarters Department of Biorganic Chemistry, University of Pisa.

Appointed as a university researcher for the scientific-disciplinary sector SECS P/13 (ex C01B) “Commodity Science” with rectoral decree n.1086 of 30/10/00 starting from 01/11/00, and since then he has been part of the Laboratory of Commodity Science and Quality of Resources (Mer.Qu.Ris), at the Faculty of Economics of the University of Florence, Social Sciences Campus. For research activities he is affiliated with the Department of Pharmaceutical Sciences, Scientific and Technological Campus of Sesto Fiorentino (Fi). Since 2013, the Scientific-Disciplinary Sector SECS - P/13 has been affiliated with the Department of Statistics, Computer Science, Applications “G. Parenti” - DiSIA.

Since December 2013, the Interdepartmental Research Unit called PHYTOLAB (Pharmaceutical, Cosmetic, Food Supplement Technology and Analysis) has been created, part of the former Department of Pharmaceutical Sciences, in partnership between the Department of Statistics, Computer Science, Applications (DISIA), the Department of Chemistry and the Department of Neuroscience of the Area of Drug and Child Health (NEUROFARBA).

Since September 1, 2015, she has been Associate Professor in Commodity Sciences, scientific disciplinary sector SECS-P/13 (now ECON10A), at the Department of Statistics, Computer Science, Applications "G. Parenti" - DiSIA, Phytolab Laboratory, Scientific and Technological Center of Sesto Fiorentino, University of Florence.

Since November 2019, he has been President of the Three-year Degree Course in "Economic Development, International Cooperation, Socio-Healthcare and Conflict Management" at the University of Florence.

Since October 2020 he has obtained the qualification as Full Professor for the scientific disciplinary sector of Commodity Sciences (SECS-P/13).

Research Activity

Her research activity concerns the following aspects:

- study of bio-components in medicinal plants, biological matrices and nutraceuticals,

- characterization and certification of agricultural and food biodiversity,

- promotion of local food and visits linked to sustainable tourism.

Technical expertise

Her technical expertise concerns the analytical and structural determination of vegetal natural substances (biomolecules, such as phenylpropanoids, flavonoids and anthocyans) and it focuses on the optimization of extraction and fractionation procedures of polyphenolic antioxidants. The activity regards the development of methods of quali-quantitative analysis of active principles and the characterization of plant matrices of biological/food interest. Analytical methods: HPLC (with UV-Vis detectors, Refraction Index, Diode Array Detector), and combined techniques of MS spectrometry, such as HPLC/MS-TOF and HPLC/MS/MS.

She is member of Member of AISME (Accademia Italiana di Scienze Merceologiche) and GP (Groupe polyphénols, Bordeaux, France).
